DVD Speaker is Dr. Kent McMillan, a meat scientist & professor at LSU. The conference brought together a group of nationally recognized speakers from many sectors of the U.S. meat goat industry and allowed them to share their expertise with attendees to help explain why the average producer is struggling to make a profit despite the shortage of goat meat in the U.S. and the rising market prices for slaughter goats. The dvd shows the grading of the goat carcass as well as cuts, yields, pricing, and how the carcass determines your profit.
